This sheet pan vegetables and sausage meal is simple, easy to throw together and great for all. The roasted butternut squash and broccoli pairs perfectly with this organic sausage.

This meal is great for dinner, or lunch prep! Make a big batch and eat it all week for lunches. Y’all know I love meal prepping! π
Even if you don’t consider yourself a good cook, you CAN make this meal. It really is fool proof.
How to make sheet pan veggies and sausage-
Ingredients
- Sausage links (organic if possible). We usually get Kiolbassa’s Smoked Beef Sausage because it’s the only organic sausage I’ve found in out local grocery stores . It’s 100% grass fed and finished! If you can buy from a local farmer, even better!
- Broccoli- fresh or frozen. Both work.
- Butternut squash- sometimes I use butternut squash, other times I use sweet potatoes. Both are delicious!
- Onion– red, white or yellow!
- Rice- optional! Sometimes I eat the sausage and veggies without anything, other times I pair it with rice or quinoa.
Instructions
- Preheat the oven to 425 degrees.
- Wash and peel the butternut squash. Chop into 1 inch thick cubes. Lay onto a parchment lined baking sheet or use a baking mat.
- Wash and chop the broccoli if using fresh. Otherwise, just pour the frozen broccoli onto the baking sheet with the squash (my favorite way).
- Chop the onion into slices, then add to the baking sheet.
- Drizzle with olive oil, garlic powder, salt and pepper
- Place in oven and cook for 35 minutes, flipping after 20 minutes. (If you are making rice or quinoa with this meal, do that now).
- Remove from the oven and add sliced sausage. Mix around and return to the oven for 5 minutes.
- Remove from the oven and serve warm. This meal pairs well with rice or quinoa!

Equipment

Ingredients
- 16 oz frozen broccoli (can use fresh)
- 1 medium butternut squash chopped into 1 inch cubes
- 2 beef sausage links organic, grass fed if possible (sliced thin)
- 1/2 yellow onion cut into slices
- 1 tbsp olive oil extra virgin
- 1/2 tsp garlic powder
- salt and pepper to taste
Instructions
- Preheat the oven to 425Β°
- Line a baking sheet with parchment paper or baking mat
- Wash and peel the outside layer of the butternut squash. Chop into 1 inch thick cubes. Arrange squash onto the baking sheet, spreading out as much as possible.
- Pour the frozen broccoli onto the baking sheet. Again, spread out as much as possible. The broccoli and squash can mix, no need to separate.
- Add the sliced onion to the baking sheet.
- Drizzle olive oil over top, then add garlic, salt and pepper.
- Bake for 20 minutes, stir and flip, then continue baking for another 15 minutes. Remove from the oven. (If you are making rice or quinoa, do so now).
- Slice the sausages into thin slices, then add to the baking sheet. You can spread this out as well. Stir everything around then place back in the oven for 5 more minutes.
- Remove from the oven and serve warm! This is great with rice or quinoa!
