These super easy waffles are both nutritious AND a hit with kids! Only 3 ingredients needed!

What you will need:
- 2 eggs
- 1 banana
- 1/2 cup oats
How to make the waffles:
- Warm your waffle maker and make sure its greased.
- Combine the eggs, banana and oats in a blender.
- Blend for about 30 seconds, or until ingredients are well combined.
- Pour the mixture into your waffle maker and cook according to your waffle makers directions. I usually overcook mine, because I don’t like my waffles super soft. I pour about 1/2 cup of the mixture per waffle.
- Top with maple syrup and berries! Easy as that!
- This batch should make about 3 waffles (depending on the size of your waffle maker).
How to make the pancakes:
- Warm your skillet over medium-low and grease well.
- Combine the eggs, banana and oats in a blender.
- Blend for about 30 seconds, or until ingredients are well combined.
- Pour about 1/4 cup of the mixture onto your greased skillet. I use a large skillet and can usually make 3-4 pancakes at a time. If you want larger pancakes, add more than 1/4 cup to your skillet.
- Once your pancake starts to bubble, it should be ready to flip. Cook until both sides are lightly golden brown.
- Serve warm and top with maple syrup and berries!
Freezing instructions:
Make a double or triple batch and freeze the rest for future use! All you have to do is cook the batter (into pancakes or waffles, or both), allow to fully cool and place in a large zip lock bag.
Lay flat to freeze.
I would suggest putting wax paper or parchment paper between the waffles and pancakes (if you are stacking them) so they don’t stick together.

- 1/2 cup oats (use GF oats if you are making this gluten free)
Instructions
To make waffles:
- In a blender, combine the eggs, banana and oats.
- Mix on low, until all ingredients are blended. (about 30 seconds)
- Pour about 1/2 cup of the mixture into the waffle maker. Follow the waffle maker's directions on how to cook the waffle.
- Serve warm and top with maple syrup and berries
To make pancakes:
- Follow all directions listed above. Instead of pouring the mixture into a waffle maker, pour onto a greased skillet. Cook for about 4 minutes per side, or until golden brown.
- Serve warm and top with maple syrup and berries.
