These roasted sweet potatoes make for the perfect side to any meal. This is super easy to make with VERY minimal prep time required!

If you’ve never roasted sweet potatoes before you are in for a treat. I make sweet potatoes almost ever week for my family. They are great to add to salads and power bowls, eat for snack or add to a breakfast scramble. You really can eat them at any time of the day.
Sweet potatoes come in different colors. They can be white, yellow, orange and even purple! The orange sweet potatoes are generally sweeter and softer than the other more starchy sweet potatoes. All sweet potatoes are full of nutrients and fiber!
How to make the potatoes:
Ingredients-
- 3 medium to large sweet potatoes
- 1 1/2 tbsp olive oil or avocado oil
- 1/2 tsp garlic powder
- salt and pepper to taste
Directions-
Preheat the oven to 425 degrees.
After washing the sweet potatoes, chop them into roughly 1 inch cubes. You can remove the skin if you would like before dicing them, but I only remove the skins when I’m feeding them to my little ones. For my husband an I, we eat the skin for the extra health benefits!
Lay the sweet potatoes on a parchment lined baking sheet and drizzle with olive oil. Add garlic powder, salt and pepper. Mix everything together with a spatula or your hands.
Bake in the oven for 30-35 minutes, flipping halfway through. I really like mine a little charred, so I always broil mine for the last couple of minutes.
Meal Ideas using Roasted Sweet Potatoes:
- Roasted Vegetable and Quinoa Bowl
- Black beans are great with sweet potatoes! Use a can of black beans or make your own in the instant pot! Add some sauteed spinach and avocado on the side.
- Roast sweet potatoes for a snack. Drizzle peanut butter and sea salt on top!
- Make a sweet potato breakfast scramble! Roast the sweet potatoes and pair with scrambled eggs, sauteed greens (kale or spinach), red pepper flakes, sea salt and pepper.
- Sweet potato and black bean tacos or enchiladas
- Sweet potatoes, grilled chicken and salad
- Rice, roasted sweet potatoes, sauteed veggies and avocado.
- Loaded sweet potato nachos! Top with beans, lettuce, guacamole, cheese and tomatoes.
- Roasted sweet potatoes really are great as a side for any recipe!

Ingredients
- 3 medium to large sweet potatoes
- 1 1/2 tbsp olive oil or avocado oil
- 1/2 tsp garlic powder
- salt and pepper to taste
Instructions
- After washing the sweet potatoes, chop them into roughly 1 inch cubes.
- Place the potatoes on a parchment lined baking sheet.
- Pour the oil over top the potatoes, followed by the garlic powder, salt and pepper.
- Toss the potatoes using a spatula or your hands until everything is well coated.
- Arrange the potatoes into a single layer. Try not to overlap the potatoes because they won't get crispy. You may want to use 2 baking sheets if your potatoes are overlapping.
- Roast for 30-35 minutes, flipping halfway. (If you like them crispy, broil for the last couple of minutes of baking).
- Serve warm or cold!
