These oven roasted sweet potatoes are the perfect side to any dish. They are super easy to make and don't require much prep work.

Ingredients
3medium to large sweet potatoes
1 1/2tbspolive oil or avocado oil
1/2tsp garlic powder
salt and pepper to taste
Instructions
After washing the sweet potatoes, chop them into roughly 1 inch cubes.
Place the potatoes on a parchment lined baking sheet.
Pour the oil over top the potatoes, followed by the garlic powder, salt and pepper.
Toss the potatoes using a spatula or your hands until everything is well coated.
Arrange the potatoes into a single layer. Try not to overlap the potatoes because they won't get crispy. You may want to use 2 baking sheets if your potatoes are overlapping.
Roast for 30-35 minutes, flipping halfway. (If you like them crispy, broil for the last couple of minutes of baking).
Serve warm or cold!
Notes
Sweet potatoes are an excellent meal prep option! Make a large batch and use them throughout the week!
