Roasted Sweet Potatoes

These oven roasted sweet potatoes are the perfect side to any dish. They are super easy to make and don't require much prep work.

Ingredients

  • 3 medium to large sweet potatoes
  • 1 1/2 tbsp olive oil or avocado oil
  • 1/2 tsp garlic powder
  • salt and pepper to taste

Instructions

  • After washing the sweet potatoes, chop them into roughly 1 inch cubes.
  • Place the potatoes on a parchment lined baking sheet.
  • Pour the oil over top the potatoes, followed by the garlic powder, salt and pepper.
  • Toss the potatoes using a spatula or your hands until everything is well coated.
  • Arrange the potatoes into a single layer. Try not to overlap the potatoes because they won't get crispy. You may want to use 2 baking sheets if your potatoes are overlapping.
  • Roast for 30-35 minutes, flipping halfway. (If you like them crispy, broil for the last couple of minutes of baking).
  • Serve warm or cold!

Notes

Sweet potatoes are an excellent meal prep option! Make a large batch and use them throughout the week!
