These energy balls are the perfect, grab and go snack! They are great for both kids AND adults! Only 7 ingredients required!
Ingredients
These are super versatile, so feel free to switch things up!
Oats: I try to buy organic oats when I can. Purchase gluten free oats if needed.
Flax & Chia: You can use a mix of flax and chia like the recipe states OR go all-in with just flax or chia seeds. I prefer a mixture since both seeds have great health benefits.
Peanut butter: Use your favorite peanut or nut butter! I’ve also used sunflower butter and it turns out just as good!
Chocolate Chips: My favorite chocolate chips are by Enjoy Life Foods. I mix it up between their semi-sweet chocolate chips and dark morsels.
To make the peanut butter balls:
Ingredients:
- 1 1/2 cup rolled oats (organic if possible)
- 1 tbsp ground flax
- 1 tbsp chia seeds
- 1/2 cup unsweetened coconut flakes
- 1/4 cup pure maple syrup (or substitute with honey)
- 1/2 cup natural peanut butter, nut butter or sunflower seed butter
- 1/4 cup chocolate chips (I use Enjoy Life Foods chocolate chips)
To make these peanut butter balls, toss all of the ingredients in a large bowl and mix together! Cover and refrigerate for about 20 minutes, roll into balls and store in a sealed container in the fridge or freezer!
