Peanut Butter Chocolate Chip Energy Balls
These no bake energy balls are the perfect snack for anyone!

Servings: 15 balls
- 1 1/2 cup rolled oats (organic if possible)
- 1 tbsp ground flax
- 1 tbsp chia seeds
- 1/2 cup unsweetened coconut flakes
- 1/4 cup pure maple syrup (or honey)
- 1/2 cup natural peanut butter (or your favorite nut butter)
- 1/4 cup chocolate chips (I use Enjoy Life Foods chocolate chips)
Pour all ingredients into a large mixing bowl. Use a spoon, or your hands, to mix all of the ingredients together. Once mixed, use a spatula to scrape the sides of the bowl, forming one large clump.
Cover the bowl and place in the fridge for about 20 minutes, so ingredients can firm up.
Roll into about 1-2 inch balls.
Store in the refrigerator, covered. (I like to store mine in the freezer to enjoy as a frozen treat!)
These are super good and go fast! I'd recommend making a double batch! You will thank me later. :)
