Peanut Butter Chocolate Chip Energy Balls

These no bake energy balls are the perfect snack for anyone!

Ingredients

  • 1 1/2 cup rolled oats (organic if possible)
  • 1 tbsp ground flax
  • 1 tbsp chia seeds
  • 1/2 cup unsweetened coconut flakes
  • 1/4 cup pure maple syrup (or honey)
  • 1/2 cup natural peanut butter (or your favorite nut butter)
  • 1/4 cup chocolate chips (I use Enjoy Life Foods chocolate chips)

Instructions

  • Pour all ingredients into a large mixing bowl. Use a spoon, or your hands, to mix all of the ingredients together. Once mixed, use a spatula to scrape the sides of the bowl, forming one large clump.
  • Cover the bowl and place in the fridge for about 20 minutes, so ingredients can firm up.
  • Roll into about 1-2 inch balls.
  • Store in the refrigerator, covered. (I like to store mine in the freezer to enjoy as a frozen treat!)

Notes

These are super good and go fast! I'd recommend making a double batch! You will thank me later. :)
