These balls are SOOO easy to make. I’d suggest making a double batch, because they go fast! š
How to make Pumpkin Pie Energy Balls:
Ingredients:
- 1 1/2Ā cupĀ rolled oatsĀ (*organic if possible)
- 1/2Ā cupĀ dates,Ā pits removed (about 6)
- 1/2Ā cupĀ pumpkin pureeĀ (not pumpkin pie filling)
- 1/4Ā cupĀ coconut flakesĀ unsweetened
- 1Ā tbspĀ honeyĀ (or maple syrup)
- 1Ā tbspĀ chia seeds
- 1Ā tspĀ cinnamon
- 1/4Ā tspĀ nutmeg
- 1/8Ā tspĀ salt
- 1/4Ā cupĀ chocolate chips
Toss all of the ingredients EXCEPT for the chocolate chips into a food processor and pulse until combined.
Pour the mixture into a large bowl and stir in the chocolate chips. Cover the mixture and place in the refrigerator for at least 20 minutes. The longer they stay in the refrigerator, the easier it will be to roll them into balls.
Use a spoon, cookie scoop, or your hands, to roll into about 1-2 inch thick balls. A single batch will make about 12 balls.
Place the balls in an airtight container and refrigerator or freeze. Personally, I love putting mine in the freezer and eating them frozen š

- 1/2 cup dates pits removed (about 6)
- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1/4 cup coconut flakes unsweetened
- 1 tbsp honey (or maple syrup)
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp salt
- 1/4 cup chocolate chips
Instructions
- Pour all ingredients into a food processor EXCEPT for the chocolate chips. Pulse until the mixture is combined. Pour mixture into a bowl.
- Add chocolate chips, stir. Cover and place in the refrigerator for at least 20 minutes, so the mixture can become firm.
- Roll into about 2" thick balls. Place in an airtight container and put in the refrigerator or freezer.
