Pumpkin Pie Energy Balls

These pumpkin balls are both nut free and dairy free! If you like pumpkin pie, you're going to love these!

Ingredients

  • 1 1/2 cup rolled oats (*organic if possible)
  • 1/2 cup dates pits removed (about 6)
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/4 cup coconut flakes unsweetened
  • 1 tbsp honey (or maple syrup)
  • 1 tbsp chia seeds
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • 1/4 cup chocolate chips

Instructions

  • Pour all ingredients into a food processor EXCEPT for the chocolate chips. Pulse until the mixture is combined. Pour mixture into a bowl.
  • Add chocolate chips, stir. Cover and place in the refrigerator for at least 20 minutes, so the mixture can become firm.
  • Roll into about 2" thick balls. Place in an airtight container and put in the refrigerator or freezer.

Notes

I love storing my pumpkin balls in the freezer, and eating them when they are really cold and firm. You can put them in the fridge, but if you haven't tried them frozen, you definitely should. :)
