Ingredients
1 1/2cuprolled oats(*organic if possible)
1/2cupdatespits removed (about 6)
1/2cuppumpkin puree(not pumpkin pie filling)
1/4cupcoconut flakesunsweetened
1tbsphoney(or maple syrup)
1tbspchia seeds
1tspcinnamon
1/4tspnutmeg
1/8tsp salt
1/4cupchocolate chips
Instructions
Pour all ingredients into a food processor EXCEPT for the chocolate chips. Pulse until the mixture is combined. Pour mixture into a bowl.
Add chocolate chips, stir. Cover and place in the refrigerator for at least 20 minutes, so the mixture can become firm.
Roll into about 2" thick balls. Place in an airtight container and put in the refrigerator or freezer.
Notes
I love storing my pumpkin balls in the freezer, and eating them when they are really cold and firm. You can put them in the fridge, but if you haven't tried them frozen, you definitely should. :)
