Baked sweet potatoes are delicious as a side or stuffed with toppings to create a meal. Baking sweet potatoes is super easy and doesn’t require much work at all! A great staple when it comes to meal prepping!
Did you know sweet potatoes can be different colors?
Sweet potatoes come in different colors. They can be white, yellow, orange and even purple! The orange sweet potatoes are generally sweeter and softer than the other more starchy sweet potatoes. All sweet potatoes are full of nutrients and fiber!
I cook with white, yellow and orange sweet potatoes. Orange are my favorite, but if the other potatoes are on sale, I might purchase those instead. All are delicious.
What you will need to make the baked sweet potatoes:
- baking sheet
- parchment paper or tin foil
- medium sized sweet potatoes (quantity depends on what you are doing with the sweet potato…If stuffing the sweet potato for a meal, plan on using 1 sweet potato per person. If using the sweet potato as a side, I generally portion out 1/2 sweet potato per person.)
- olive oil
- sea salt and pepper
- toppings of choice
How to bake sweet potatoes:
- Wash the potatoes, scrubbing the skin. The skin is edible and yummy so you will want to scrub off all the dirt.
- Cut the sweet potato in half, lengthwise.
- Rub the flat part of the sweet potato with olive oil and a pinch of sea salt and pepper.
- Lay the sweet potato halves flat side down on a lined baking sheet.
- Bake the sweet potatoes in the oven at 425 degrees for 30-45 minutes.
Cutting the sweet potatoes in half reduces the cook time and they always come out soft and fluffy.
What to serve with baked sweet potatoes

- serve with seasoned black beans and a veggie
- baked sweet potato with grilled chicken and a salad
- serve with steak and steamed veggies
Stuffing your baked sweet potato
Sweet potatoes are not only amazing as a side, they are great served as a meal as well! Here are some ideas on how you can stuff your sweet potato!
- Taco stuffed sweet potato- stuff your potato with taco meat of choice (beef, lentils, black beans) mixed with taco seasoning, and top with lettuce, tomato and guacamole
- Barbecue chicken sweet potato- stuff your potato with shredded buffalo chicken, then top with red onion, cilantro and sour cream
- Chickpea and spinach sweet potato- stuff your potato with sauteed chickpeas, wilted spinach and lemon tahini sauce
- Sweet potato “nachos”- stuff your potato with black beans, red onion, guacamole and salsa.
Using baked sweet potatoes for breakfast or a snack
Breakfast or snack ideas:
- Add scrambled eggs, bacon and avocado
- Top with peanut butter or nut butter, and fresh berries
- Stuff the potato with yogurt and granola
- Top with peanut butter and banana
- Stuff the potato with avocado, tomato and red pepper flakes

Baked Sweet Potaotes
Equipment
- baking sheets (2)
- Parchment paper or tin foil
Ingredients
- 4 medium sweet potatoes
- 1 tbsp olive oil
- salt and pepper to taste
- coconut oil or butter (optional)
Instructions
- Preheat the oven to 425°
- Wash the sweet potatoes, scrubbing the skin well. The skin is edible so you want to be sure you scrub the flesh clean. Pat dry.
- Cut the sweet potatoes in half, lengthwise.
- Rub olive oil along the flat part of the sweet potato, and add a pinch of both salt and pepper.
- Place sweet potato halves flat side down, on a lined baking sheet.
- Bake for 30-45 minutes, checking periodically.
- You will know the sweet potatoes are finished when a fork can very easily pierce through the inside of the sweet potato. The skin will also start to brown, and may shrivel a bit.
- Serve your sweet potato with butter or coconut oil, or toppings of choice. See ideas above on stuffing and serving your sweet potato.
