These Loaded Sweet Potato Nachos are the perfect appetizer, snack or lunch! With ingredients such as sweet potatoes, black beans, red onion, salsa and guacamole, they are a great healthy alternative to your typical nachos.
Jump to RecipeThese are different from the crispy chip nachos you may be used to. Instead, they have a soft sweet potato base, then are topped with the essentials.. These sweet potatoes are naturally gluten free, dairy-free and vegan.

How to prepare the Sweet Potato Nachos:
Gather your ingredients and preheat the oven.
Cut the sweet potato into rounds. Toss in a mixture of olive oil and spices, then place on a parchment lined baking sheet and bake for 30 minutes, flipping halfway through.
Remove from the oven and add red onion and black beans. Return to the oven for 10 minutes.
Finally, top with your favorites! Try homemade guacamole on top, as well as salsa and green onions. You won’t be disappointed!

Loaded Sweet Potato Nachos
Equipment
- Baking Sheet
Ingredients
- 1 tbsp extra virgin olive oil
- 2 medium/large sweet potatoes
- 1/4 tsp garlic powder
- 1/4 tsp chili powder
- 1/2 tsp cumin
- 1 15oz can black beans drained and rinsed
- 1/4 cup red onion diced
- 2 green onions diced
Optional Toppings:
- salsa
- guacamole
- shredded lettuce
- cilantro
Instructions
- Preheat the oven to 425 degrees.
- Cut sweet potatoes into rounds. (see photo above)
- Combine garlic, cumin and chili powder in a small bowl. Mix.
- Place sweet potato rounds in a large mixing bowl. Add the olive oil. and spices. Using your hands, toss the sweet potatoes until they are well coated.
- Lay the sweet potatoes flat on a parchment lined baking sheet.
- Bake for 30 minutes, flipping halfway through.
- Remove from the oven and add the red onion and black beans, placing them on top of the sweet potatoes. (see photo above)
- Bake for another 5-10 minutes, warming the beans and onion.
- Remove from the oven and top with green onion, and toppings of choice! Salsa and guacamole on top are GREAT choices. π
