Jump to RecipeWe are BIG avocado fans over here and eat at least one a day between myself and my 1 1/2 year old twins. My husband…not the biggest avocado fan, but he sure loves this guacamole!
Just a FEW of the benefits of avocado:
- Potassium- contains more potassium than a banana, which is good for healthy blood pressure
- High fiber and aids digestion
- A healthy fat and a good source of folate, which is great for cell growth
- Full of vitamins (C, E, K, B6) and provides Omega-3 fatty acids
What to use guacamole for:
- Chips/crackers and guacamole- a great appetizer or snack. For a healthier version, replace the chips with vegetables.
- Mexican food- this guacamole is GREAT on top of tacos, enchiladas, burritos, quesadillas….really it’s great on top of any Mexican dish! Like these sweet potato nachos and this 3-Bean Vegan Chili!
- Buddha/veggie bowls- Try adding guacamole to these Roasted Vegetable and Quinoa bowls, or this Sweet Potato Lunch Bowl!
- Dipping- I like dipping these Roasted Sweet Potatoes into the guacamole for an afternoon snack! Homemade fries and guacamole are another tasty option!
- Replace the mayo with guacamole when making a tuna sandwich! Or, mix the guacamole with the tuna fish and eat it with crackers for a snack.

Homemade Guacamole
This guacamole is fast, easy and delicious! Only 8 ingredients needed and it takes less than 10 minutes to make!
Servings: 3
Ingredients
- 2 avocados pits removed
- 1/4 cup onion yellow, white or red (diced)
- 1/4 tsp garlic powder
- 1/4 tsp cayenne
- 1/2 tsp cumin
- 1/4 tsp sea salt
- 1/3 cup cilantro chopped
- 1/2 lime freshly squeezed
Instructions
- Cut avocados in half, lengthwise and remove the pits. Using a spoon, scoop avocados into a medium size mixing bowl. Mash slightly with a spoon or potato masher.
- Add the remaining ingredients to the bowl (garlic, cayenne, cumin, salt,onion, cilantro, lime juice) and mix gently. Don't over-mix. You will want chunks of avocado left in the mixture.
- Transfer guacamole into a serving dish and pair with chips, vegetables or crackers. Great on top of Mexican dishes or vegetable bowls!
- Best if eaten right away.
Notes
Note** – This guacamole has some spice to it, so if making it for kiddos, or someone who doesn’t like spicy food, remove the cayenne or reduce the amount.Β
