This is the ONLY way I make hard boiled eggs now. With only 6 minutes of cook time, your eggs will turn out perfectly between medium and hard boiled.
Jump to RecipeI could have sworn I HATED hard boiled eggs. The smell is less than appealing and they don’t really give you the, ” I want to eat that NOW” vibe.
However, when I gave up eating meat a few years ago, I continued to eat eggs and thought I would give hard boiled eggs another shot. Turns out, they are really good!
I started introducing them again as a snack. I would pair them with tomatoes, sea salt and honey mustard. They kept me full and were satisfying. I started adding them to lunches and dinners. They have become a simple and budget friendly option during meal prep.
How to make hard boiled eggs in the instant pot:
- Place the trivet on the bottom of instant pot.
- Add 1 cup cold water to the bottom.
- Add as many eggs as you can fit. The eggs can overlap if you are making a big batch, however I have NOT tested this method. I generally only make enough to fill the bottom of the trivet, without any overlap.
- Close the lid to the instant pot and set the valve to “seal.”
- High pressure cook for 6 minutes. This will cook the eggs to be “medium boiled” eggs. The yolk should be a mixture of yellow and orange. If you like yours more cooked than this, adjust the time by adding up to 4 additional minutes.
- The instant pot will take roughly 5 minutes to come to pressure (depending on your pressure cooker). Mine took just over 5 minutes.
- During this time, prepare your eggs ice bath, by placing ice in a medium/large bowl of cold water.
- Once the instant pot has finished cooking, it will beep. At this point you want to quick release the pressure. Do this carefully, using a hot pad or long tongs. You don’t want the hot steam burning you!
- Using a spoon, silicone tongs, or ladle, remove the eggs from the instant pot and place them in the ice bath you prepared.
- Keep the eggs in the ice bath for 5-10 minutes and allow to completely cool.
The eggs will keep in the refrigerator for about a week if you don’t peel them. If you do, they will be good for 3-4 days.
What can I do with hard boiled eggs?
Here are some options using hard boiled eggs for a snack or lunch!
- Hard boiled eggs, halved cherry or grape tomatoes, sea salt and honey mustard.
- Hard boiled eggs with “everything but the bagel” seasoning.
- Avocado toast with hard boiled eggs on top
- Mashed hard boiled egg and avocado sandwich. (Mash the hard boiled eggs with avocado and add any seasonings you like. I like to add dill and sea salt to mine).
- Egg salad
- Egg salad sandwich
- Cobb salad
- BLT with hard boiled egg sandwich, or place on top of a toasted English muffin

- To peel, tap the sides of the egg, all the way around until the egg is cracked all the way around. Don't overdue it, you don't want your egg breaking open. Run the cracked egg under cool water as you peel. I've found this to be the easiest method.
