Instant Pot Hard Boiled Eggs

This is the ONLY way I make hard boiled eggs now. With only 6 minutes of cook time, your eggs will turn out perfect!

Ingredients

  • 2 eggs
  • 1 cup cold water

Instructions

  • Place the trivet on the bottom of instant pot. Add 1 cup cold water to the bottom.
  • Add as many eggs as you can fit. The eggs can overlap if you are making a big batch, however I have NOT tested this method.
  • Close the lid to the instant pot and set the valve to "seal." High pressure cook for 6 minutes. This will cook the eggs to be "medium boiled" eggs. The yolk should be a mixture of yellow and orange. If you like yours more cooked than this, adjust the time by adding up to 4 more minutes.
  • The instant pot will take about 5 minutes to come to pressure (depending on your pressure cooker). During this time, prepare your eggs ice bath, by placing ice in a medium/large bowl of cold water.
  • Once the instant pot is finished cooking, it will beep. At this point you want to quick release the pressure. Do this carefully, using a hot pad or long tongs.
  • Remove the eggs from the instant pot and place them in the ice bath you prepared. Keep the eggs in the ice bath for 5-10 minutes and allow to completely cool.
  • To peel, tap the sides of the egg, all the way around until the egg is cracked all the way around. Don't overdue it, you don't want your egg breaking open. Run the cracked egg under cool water as you peel. I've found this to be the easiest method.

Notes

This recipe only calls for 2 eggs. However you can add as many eggs as you want
Storing the eggs:
Once peeled, store in an airtight container in the refrigerator for up to 4 days. 
Store unpeeled eggs in the refrigerator for up to a week.
